Smashed Avo & Sauerkraut Toast

Ingredients:
1 slice of authentic sourdough (or gluten-free bread if needed)
1 handful of baby spinach
1/4 medium avocado
3 tablespoons raw unpasteurised sauerkraut
1 tablespoon beetroot hummus
1 egg (prepared to your liking)
Salt and pepper to taste
Method:
Toast the sourdough and spread with beetroot hummus. Stack on the baby spinach, avocado and sauerkraut.
Top with the egg and season to taste. Serve immediately.
