Chloe’s Apple Crumble

Stewed apples are a powerhouse for gut health, offering a soothing embrace to our digestive system. Packed with soluble fibre and pectin, they act as a gentle cleanser, promoting healthy digestion and regularity. Additionally, warm spices like cinnamon and ginger not only add a delightful flavour but also boast anti-inflammatory properties, supporting overall gut wellness.
Please note: you may substitute the oats for 100 grams of almond meal + 50 grams of flaked almonds for a Coeliac-friendly option.
Ingredients:
FILLING:
6 apples (or pears)
2 tbsp plain water
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp ground ginger
CRUMBLE:
150g rolled oats
1/2 cup desiccated coconut
1 tsp ground cinnamon
1 tbsp pure maple syrup
3 tbsp extra virgin olive oil
Method:
Preheat the oven to 160 degrees, fan forced.
Wash and chop the apples (leave the skin on for added fibre).
Add all filling ingredients to a saucepan. Cook over medium heat for 15 minutes to soften the apples. Stir regularly (add more water if needed).
In a mixing bowl, rub the crumble ingredients together using your fingertips.
Pour the apple mixture into an oven-safe dish. Top with crumble. Bake for 30-45 minutes or until golden.
Serve with (unsweetened) Greek yoghurt.
