Antioxidant-Loaded Rocky Road

This homemade treat is a fun way to enjoy a mix of textures and flavours while adding some nutrient-dense ingredients. Dark chocolate (70% or higher) is rich in antioxidants and can support heart health. Nuts and seeds provide healthy fats, protein, and essential minerals like magnesium and zinc. Cranberries add natural sweetness with a boost of vitamin C and fibre, while coconut contributes healthy fats and a delicious crunch. While this is an indulgent snack, it also offers nourishing ingredients when made with quality chocolate and a balanced mix of add-ins!

You'll Need:

300g chocolate (preferably dark for extra antioxidants)
450g of your favourite mix: nuts, seeds, biscuits, marshmallows, lollies—whatever you love!
Some ideas include pepitas, sunflower seeds, pistachios, peanuts, cranberries, tiny marshmallows, Turkish delight, desiccated coconut, and/or coconut flakes.

How to Make:

  1. Melt the chocolate in the microwave in bursts, stirring regularly to avoid burning the chocolate.

  2. Add your chosen ingredients and stir until combined.

  3. Line a tray with baking paper and pour in the mixture. Smooth the top with a spatula.

  4. Pop it in the fridge to set, then cut into pieces to enjoy!
